Three course dinner......

As most people know....or lets say...all the people that know me....know that i LOVE to cook....last week Claudia gave me an early birthday present (my birthday is in December), but she thought seeing that im going on the ship again in October...she should give it to me now so at least i can enjoy it....yes you guessed right...A cookbook.....and some roses....medditeranean cookbook...so cool...from Greece to Spain to Turkey to Italy....

So on Saturday i decided to actually cook a three course meal from the recipe book...question was what to make because there are a lot of delicious looking items....so in the end i decided on an aubergine parcel, a citrius fish and a citrus dessert....

Starter:

Aubergine parcel...stuffed with basil, tomato and mozzarella....so...first slice aubergine very thin....boil wateer...add salt....cook aubergine until soft (about 2min)..... Take out and pat dry on paper towel....take two pieces and form a cross...add a slice ot tomato...salt and pepper...basil leave...slice of fresh mozzaella (not pizza mozzarella)....basil leave....tomato slice....salt and pepper...close parcel...refrigerate for at least 20min...sauce....4T oil, 1t balsamic, 1T sundried tomao paste, 1T lemon juice...mix.....before serving...fry aubergine parcels in some olive oil, about 5 min on each side....also heatup some pinenuts.....to serve...aubergine parcel...decorate with sprinkles of pinenuts...then drizzle sauce...man so so nice...here is the pic....

Mains:

Citrus fish.....So...orAnge segments and lemon segments to marinate.....then fry fish in olive oil...2min on each side..remove and place in oven....remove excess oil in pan, add some butter...chopped basil and anchovies....then i decided to serve with rice....garnish the lemon and orange segments....man it was divine....here is a pic...

Dessert:

So....i guess the picture in the cookbook is what made me decide what to make....first hollow out oranges and keep flesh aside....so i cooked for 5 people...thus i needed 10 oranges...the extra 5 i had to juice....then i had to make some sugar syrup...add rind of 5 oranges and juice of 10 oranges....add juice and rind to cooled syrup...then pour into shallow container...freeze 3 hrs...after 3 hrs whisk and freeze another 3 hrs...then fill oranges and freeze until serving...amazing...cause it wasnt the consistency of sorbet (i have a friend who isnt keen on sorbet..but this was deintey not like sorbet)...much better...it was like orange crystals....granulates...perfect way to end the meal...here is a pic....
