Foodies

So....now lets talk about some food stuff...after all...that is my passion...some new things i cooked and a restaurant i again went to...and again was divine...and a food present my gran bought for me...and works wonders with my bubbly.....

So..first up....cooking passion....of course a good old fillet.....i love...the best way....put the whole fillet on the braai and sear it for about 10min.....after that place it in the oven for 20min on 80 degrees...then it is pink in the midldle....amazing...served with some salad and fresh ciabatta......so good...and exactly what i feel like when i have been away from home so long......the outside crispy and the middle pink and soft....here is a pic....

Fillet crispy on the outside and pink in the middle

Dessert....i made my own apple struddle....here goes.....

1. Chop 500g apples and place into a bowl

2. Add the juice of half a lemon, 5T chopped walnuts or hazelnuts, 5T sugar, 5T raisins, 1/2t cinnamon

3. Take 1 sheet of phyllo pastry and butter the whole sheet (butter must be melted), add a second sheet on top, repeat until you have 4 sheets stuck together

4. Place the filling onto one side of the phyllo pastry and fold the other half over, close the ends with butter and folding, ensure it is air tight

5. Bake on the middle rack for 35-40min on 200 degrees, until phyllo is golden to dark brown (otherwise not crispy enough)

6. Serve with vanilla ice cream...and yes...i do have a pic...

More goodies which i cooked included fish with a citrus dressing.....fancy beef patties and chicken a la ME....

In this blog i will write about my favourite of the three....maybe you are able to guess.....maybe not....it was in actual fact....the chicken....so....im gonna describe the receipe for 4 people....

1. Season 4-6 chicken breasts (calculate about 160- 200g per person) with paprika...chicken should be coated in paprika

2. Cut 10 tomatoes into chunks

3. Cut 2 large onions into half and then slice

4. Cook onions and 2T garlic with some olive oil in a pot until transluscent....then add the tomatoes....simmer until soft....takes about 15- 20min, then switch off (season with some peri peri, salt and pepper)

5. Cut chorizo (250g sausage) into slices

6. Sear chicken for about 2min on each side and place them into oven proof dish

7. Flash fry chorizo and add to tomato and onions

8. Pour the sauce over the chicken, covering it

9. Chicken should be covered and placed into oven on 80 degrees for an hour....can be up to 1.5hrs

10. Serve with bAby boiled potatoes....here is my pic

Hint: Serve the chicken on the plate and put baby boiled potAtoes in the middle and everyone takes as many as they want.....

Cihicken a la ME

I loved it...and it was a hit with all the guests...and a perfect meal..cause you place the chicken in oven and no need to worry....can entertain guests while chicken cooks....

And now to the present from my gran....hibiscus flowers in syrup......you place one hibiscus flower in a champagne glass, and add white sparkling wine...the flower will open and discolour the sparkling wine to a light pink....looks divine but tastes fab...at the end...go ahead and eat the hibiscus flower....how amazing....

And last but def not least....went to the amazing restaurant Licorish again....here is the website...situated at the Nicol Way shopping centre

http://licorish.co.za/

For me...the whole restaurant works....the waiters are well trained and friendly, the wine is displayed on racks (with visible prices), the starters are fab, mains wow...they always have specials and.....desserts are very different and interesting.....not everyones taste though.....so let's start....

We were 4 and we chose 3 starters to share (chilli fried calamari, chick pea fritters and tempura scAllops), amazing...first thing waiter asked...would you like us to put it all onto one platter so you can shaRe easier...wow...brilliant idea...of course......and presentation....wow....

In the fron calamari, middle scallop tempura and in the back chick pea fritter

All served on a different sauce...just great...mAins ranged from special (trio of fillets), to fillet with bernaise to fillet with wine sauce to dukkah crusted ostrich....that wAs mine...i ordered it medium....next time i would order the ostrich medium- rare...flavours.....just wow....the mAins agAin...great....

Trio of fillets (fillet in puff astry, fillet with bernaise sauce and fillet with red wine sauce)

Dessert...i was the only one that ordered....cause i love cheese and i just could not resist the sound of a gorgonzola cheese cake...and yes...waiter was honest...it does taste like gorgonzola but somehow sweetish....i loved it...cause it was light And not so sweet...the others tried hAlf a spoonfull and all decided it is definitely NOT to their taste....as i mentioned....different desserts And not to everyones taste....last time i tried the strawberry crumble with liquorish ice cream (kim and Liezl loved it, my mom and i thought half and half and my dad didnt like it at all)
