Desserts....

Although im not the biggest dessert person....when i am bored....yes...i do somehow feel like baking something...scrambling through receipe books i do find some interesting things....so lets talk about my 3 interesting things i tried.....

Mini apple crumbles (makes 3)

-150g sliced and peeld apples (about 3)

-7g caster sugar

-5g light brown sugar

-20g flour

-15g butter

-6 chopped peacan nuts (optional)

-vanilla ice cream or custard for serving

1. Divide the sliced, peeled apples into 3 ramekins

2. Combine the sugar and flour then add butter and mix with fingertips until small sand-like clusters form, then add peacan nuts

3. Then sprinkle on top of the mini ramekins and bake in a pre-heated oven on 190 degrees for 35min.....

4. Allow to cool for about 10min then serve with custard or vanilla ice cream....divine....

(P.S. If you want to prepare, put apples with a hint of lemon juice in ramekins, combine dry ingredients and add the dry to the top of ramekins just before baking)

Apple crumble with vanilla ice cream

My next one..... banana cake....this receipe is for people who like banana bread but do not want the bananas to over-power....a subtle banana flavour

-350g well riped bananas mashed

-2 eggs

-125g butter

-180g brown sugar

-1t vanilla extract

-1t cinammon

-250g flour

-3/4t bicarbonate of soda

-1t baking powder

-3T warm milk

1. Pre-heat oven to 180 degrees and butter a 30x11cm loaf tin

2. Cream sugar and butter until smooth

3. Add mashed bananas, eggs, vanilla and cinammon

4. Sieve in flour and baking powder

5. Combine milk and bicarbonate of soda and then mix into batter

6. Bake for 50min then remove from the tin and let it cool on rack completely...stores well in a tin for up to 5 days....not too sweet...excellent for breakfast or healthy snack....

Banana bread

And last but not least.....the orange, pine nut and olive oil cake....this is great served for afternoon tea and/ or coffee....it is better from the second day and keeps in a tin for up to 5 days...here is what you need and how it is done...

-2 eggs seperated

-1t vanilla extract

-250g caster sugar

-25g light brown sugar

-100ml olive oil

-200g cake flour

-1t baking powder

-Rind of 1 orange

-125ml freshly squeezed orange juice (about 2 oranges)

-20g pine nuts

1. Brush a 22cm spring form with olive oil, dust with flour and pre-heat oven to 180 degrees

2. Whisk egg whites with a pinch of salt until stiff

3. Combine vanilla extract and egg yolks then add caster sugar and light brown sugar until light

4. Add olive oil bit by bit

5. Add flour, baking powder, orange rind and orange juice....mix until smooth

6. Fold in egg whites

7. Scrap batter into tin, sprinkle with pine nuts and bake for about 35min, until toothpick comes out clean

8. Cool in tin for 30min then remove the tin....enjoy
